HONEYSTONE
A waiter serves rabbit stew to a couple in the lemon-tree courtyard of a limestone palazzo

Five houses · Malta and Gozo

Maltese kitchen, from the rock and the sea.

The Greeks called the island Melitē, the place of honey, and its towns are built of a limestone the colour of honey. We cook what the islands give: fish from the boats of Marsaxlokk, ġbejniet and vegetables from Gozo, rabbit from the country, honey from the wild thyme — and the origin of every piece of meat and fish is on the menu.

Catch of the day

On the quay in Marsaxlokk you choose your fish at the counter: grouper, pandora, sea bream, and from 15 August the lampuki. It is weighed in front of you, priced by the 100 grams, and cooked the way you ask.

74 per cent of what we buy for the kitchens is fished, grown or made on Malta and Gozo.
